Honey-Garlic Salmon
Serves: 4
1 ¼ lbs. salmon
4 cloves minced garlic
1 tsp ground ginger
½ cup honey
¼ cup soy sauce
2 pinches cayenne pepper
Combine all ingredients in a gallon-sized Ziplock bag and wiggle the salmon around to make sure it is fully coated. Let it marinate for 15-20 minutes.
Preheat the oven to 350°F. Spray a 9x13 baking dish with cooking spray.
Place a large skillet (or two!) on the stove over medium-high heat. Add salmon and sear 1-2 minutes per side. (If one side still has the skin, only sear the side without skin.) Transfer to greased baking dish.
Bake 15-20 minutes, coating the salmon halfway through with half of the remaining marinade.
Pour the remaining marinade into the skillet used earlier and cook for 3-5 minutes until it is thick. Drizzle this over the salmon when it comes out of the oven and enjoy!
This is a delicious recipe that isn’t spicy despite the cayenne pepper. It goes great with Petey’s Loaded Mashed Potatoes and can be made easily and prepared ahead of time!
