Southwestern Chicken with Black Beans

Serves: 4

1 lb. chicken breast

15 oz. canned black beans

1 cup mild salsa

½ cup shredded cheddar cheese

  1. Brown chicken in a skillet over medium-high heat.

  2. Once the chicken is cooked, pour in the black beans and the salsa and bring it to a simmer.

  3. Top the chicken pieces with cheese and continue to simmer 1-2 minutes until the cheese is melted. Enjoy!

This is both a delicious dish and a very easy one! It’s quick and the kids can help by adding ingredients to the pan. I love to eat with a bit of Caesar salad and tortilla chips.
